Can it’s that point of yr once more already? I am simply ending off my season batch of elderflower cordial yesterday, as I walked house, I noticed that my favorite spot for accumulating elder tree’s bounty was positively dripping with ripe elder berries.  I am positive lots of people would both discover this stunning spectacle or may assume “beautiful” and cross on by.  However not me.  I paused to ‘see one thing of the fantastic thing about nature’ (to cite John Mortimer) then dashed house to fetch a bucket and secateurs.  In fact I left lots for birds and different wildlife and, imagine me, they will have berries stripped to the stalk in days. So my berries at the moment washed clear of and grime and frozen for pies, jam and syrup.  Why freeze? That is okay as I am going to discard the stems when I’ve extra time.It is value noting that whereas the flowers are edible, the uncooked berries are poisonous, as is the remainder of the plant.  However the excellent news is that cooking the berries destroys the toxins making them a helpful addition to all types of recipes.  Me, I am beginning with Elderberry Syrup.  I’ve discovered a recipe on The Spruce Eats, an American website, which sounds slightly just like the warming winter tincture I normally purchase to spice up my immune system throughout the colder months.  In that recipe the berries are cooked, mashed, strained which calmly spiced with honey, ginger, cinnamon, cloves and lemon.
